I first discovered zucchini last summer.  My lovely neighbour had an abundants in her garden and wanted to share some with my family. As green as I was (pun intended), when it came to zucchini, I decided to try some. I had an old recipe for carrot cake lying around, so I decided to experiment. Those who know me well, call me the "Queen of substitution" because I always substitute recipes due to lack of ingredients. With my lady luck on my side, (touch wood), I seem to make all my substituted recipes a hit!


Mumzy's Zucchini Banana Bread

Ingredients:   

  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 1/2 cup oil
  • 1/2 cup grated zucchini
  • 2 mashed bananas 
  • 2 eggs
  • 1 1/2 tsps cinnamon
  • 1 dash of nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/8 tsp salt 
  • 1/2 cup milk
Variation: Substitute zucchini with 1 cup carrots and omit banana
  
Directions:
Mix sugar, eggs and oil. Beat well. In another bowl, mix flour, baking soda, baking
powder, salt and cinnamon. Add dry ingredients, alternately with milk to the egg
mixture. Stir in grated zucchini and mashed bananas. Pour into a greased loaf
baking pan. Bake at 350 degrees for 30 minutes or until top center of loaf springs
back, when touched. Frost with Betty Crocker≠TM French Vanilla or Cream Cheese Icing.

According to Bob Shrier's idea about the Gift of Friendship, when we think about friendship, we think of "romantic passion." However, "we tend to overlook" the love that is shared between two human beings without any sexual contact or intention, and the fact that if we didn't love each other outside our blood families, "our social structure would crumble." The reasoning could be that we tend to normalize it, and view friendships based on their class such as coworkers, classmates, acquaintances etc... rather than their true meaning. Friendship should be based on the intensity of the bond. Like the relationship you once shared with a classmate many years ago, may have just been a social bond, but in fact may have had a deeper meaning for one or both parties involved. Relationships aren't perfect, but we must remember it's the "love" bond we share, and the impressions we leave behind.


In reflection, I met a dear high school friend this week at the Rehabilitation Center. We both were there with a loved one. It's funny how you can live in a such a small city and never see one another for years, then unforeseen circumstances bring you together once again.  Life kept us apart for 22 years, yet we reconnected just as if we had never parted. Our relationship was casual. We did share some good times. I know in my heart our relationship had meaning and when we did see each other, we rekindled the friendship we once had. She did later write me a special message to thank me for our brief encounter, and she did reminisce about how I was a good listener and gave good advice back then. I was so moved by her message and very surprised that I could leave such an impression. In conclusion, this proves that true friendship as brief as it may be is based on love.

So today, I would like you to please take the time to reflect on your own relationships and make that impression last a lifetime!

As the apple trees blossom in the Spring comes Fall fresh apples. We have seven trees and two crab apples trees that we use to make apple crisp, pies and apple jelly. I first discovered how to make apple jelly from a dear friend last year. I will be posting her personal recipe soon.

I made my hubby his personal favourite for his 40th birthday last year. Everyone at the party had a scrumptious piece a la mode and were amazed.




Mumzy's Apple Crisp

  • 3/4 cup flour (white or whole wheat)
  • 1 cup brown sugar
  • 1/3 cup butter, softened
  • 4 cups of apples, peeled and sliced
  • 1 cup oatmeal
  • 1 dash of nutmeg
  • 1 tsp cinnamon
Mix butter, sugar, flour and spices. Place apple slices in 8x8 inch pan and sprinkle with 1/2 tsp of cinnamon and 1 cup of oatmeal. Sprinkle butter topping over apples. Bake at 350 degrees for 1 hour or when top is browned and apples are soft.

It was about this time last year when I visited a psychic. She told me she saw me writing. Not sure if it was a book or a magazine article, but she did indeed see me writing. I laughed in dismay and here I am today, writing. How ironic is that? Well, not really, I was contemplating it for quite some time now, so today I decided to give it a whirl.

This is my story. A tale of a spolied city girl gone country and living the so call "hubby" dream. I say "hubby" dream, because it wasn't my forte. I like the idea of being self-sufficient, but not sure if "country life" or should I say "farm life" has completely grown on me. You'll have to come back and visit often to see if the "farm life" has won over this city girl....so please stay tuned!
